Cellobiohydrolases (exocellulases) hydrolyze cellulose processively, . by sequential cleaving of soluble sugars from one end of a cellulose strand. Their activity generally shows an initial burst, followed by a pronounced slowdown, even when substrate is abundant and product accumulation is negligible.
