Gluten-free food was among the top five most-searched words on Google in 2013. The global gluten-free market is projected to reach US$ billion by 2018. Celiac disease is a systemic autoimmune syndrome involving a gluten-induced chronic inflammation of the small bowel mucosa, with extensive short and long-term negative health consequences if untreated including GI cancer. The present study aimed to find the potential of gluten-free foods in world, USA and India. Since USA is the largest market of gluten-free foods and India has largest population of celiac patients in world being a major wheat consuming country.
