The study was conducted to evaluate the chemical composition and microbial contents of Romi cheese in Khartoum state. Sixty samples of Romi cheese (30 samples from each of plastic and paper packs) were collected randomly from three different areas (Khartoum North, Omdurman and Khartoum). The manufacture date of cheese samples was defined to fixed date.
