Phytase (myo-inositol hexakisphosphate phosphohydrolase)enzyme was isolated from wheat varieties to do kinetic study of phytate degradation. The four wheat varieties selected on the basis of their higher phytase activity for investigation were DBW-17, HD-2894, HUW-234 and LOK-1 wheat variety. Among the four selected wheat varieties, LOK -1 variety reported the maximum phytase activity during enzyme kinetics study. |
