With the text object selected you can use the mouse to select a portion of the text by dragging over it just as you would in any text editor. You may need to change the order of layers in the Layers panel to select text in a vector text layer that is underneath another one. When you are in Edit mode Photoshop displays selection guidelines and other editing aids. This can make it difficult to follow the text.
