Analysis was conducted on all nutrients or nutrient groups for which numeric data were provided in at least 10 of the 137 crop studies that reported comparisons between organic and conventional crops (see Appendix 10). The following 23 nutrients and other substances met this criterion (listed in order of number of studies reporting comparisons): nitrogen, vitamin C, phenolic compounds, magnesium, calcium, phosphorus, potassium, zinc, total soluble solids, titratable acidity3 , copper, flavonoids, iron, sugars, nitrates, manganese, ash, dry matter, specific proteins, sodium, plant non-digestible carbohydrates, β-carotene and sulphur. .
